Let’s talk about fresh spinach and leafy greens in general for a moment. As a child in the 60s/70s I only knew very finely chopped frozen spinach that came with cream, ready to be warmed up. That was “meh”. I had no idea what spinach leaves looked like besides being green and there were no other leafy greens ever.
At some point in my early twenties I was served fresh leaf spinach that was fried with garlic in olive oil. I was astonished and absolutely loved it but it still seemed to be difficult to come by proper spinach leaves, not that baby spinach nonsense in a plastic wrappers

In my years in the UK I found frozen whole leaf spinach, and then finally back in Germany I bought proper fresh spinach leaf bunches from the market that we used to have in front of the house. Since the market is gone, it’s back to baby leaf style in plastic - unless I go to a Turkish supermarket or other markets a little bit further away.
We all love fresh spinach and leafy greens in our food, so I’ve started using whatever greens come with other vegetables like radishes, kohlrabi, May turnips to fill that gap. Or I try out whatever I can find in Asian supermarkets. All of those are often surprisingly good (but so far I’m not that keen on carrot greens)!
Today’s really easy to prepare Indian style egg and (baby leaf) spinach curry worked well with the garlic and coriander tempeh that needed to be eaten. Without the egg this would also be a great vegan meal.
