Method: Set soda aside and build drink in glass in the order listed. Add a large rock of ice, add soda, and stir until color is even. <br>

I found this one on the cheerstohappyhour IG channel and had to work my butt off to make it happen ;) The build is quite involved as listed, making blue simple syrup and I also had to make the lime cordial (I'd wanted to for a while anyway). The umami bitters are also very niche, but luckily I'd already gotten them for another cocktail some months back. And finally, the clear ice and maintaining orchids at home are both their own projects spanning days/months :D If you can manage to make it, it's got a five-star look and tastes great on a sunny afternoon!<br>

🔵 Blue simple syrup: combine 1 cup sugar and ¾ teaspoon blue spirulina powder (or food coloring), and stir to incorporate dry ingredients. Once mixed, add one cup water then stir until everything is dissolved.<br>

Method: Combine all the ingredients in a cocktail shaker filled with cracked or cubed ice. Shake and double-strain into a chilled coupe. Float a lime wheel in the center of the drink and rest a raspberry in the center.<br>

Named after an ester discovered in a dust ball scanned by the Max Planck Institute of Radio Astronomy in 2009, which smells of rum and gives raspberries their taste! Spec is by Martin Cate, Smuggler's Cove p121.<br>

Method: Combine all ingredients in a mixing tin with crushed ice and blend. A shaker with crushed ice will also do. Open pour with gated finish into glass and garnish.<br>

I always like drinks with bitters as a base spirit. They're bound to be bold and interesting! This one is tempered by coconut and pineapple, with a little bit of pot still rum to give it that Daq vibe. Hoping to see weather like this again soon!<br>

Method: Add all the ingredients to a drink mixer tin. Fill with 12 oz crushed ice and 4-6 agitator cubes. Flash blend and open pour with a gated finish into a footed pilsner glass. If you don't have a drink blender (I don't) then shaking obviously does the trick.<br>
<br>
For the garnish use one spear for three maraschino cherries and the pineapple chunk. Place horizontally on the rim of the glass. It represents V for victory in Morse code •••—<br>
<br>
This drink is a certified tiki classic from Don the Beachcomber during WWII, later decoded by Jeff Beachbum Berry, and republished in the Smuggler's Cove book, page 43.<br>

An easy-going summer sipper! Sometimes mixing up a warm-weather drink lets me pretend it isn't winter for an hour :) Come to think of it, where pisco comes from it is indeed summer! This one was seen on IG from Luiz Fernandes. I didn't have a grapefruit so I did a lemon twist garnish.<br>
