Like many parts of #Asia #Hongkong has a long standing wet market culture. While live poultry is not as commonly sold at those markets anymore, fresh and live seafood is a staple. It is preferred over frozen options for its freshness. However, the wet markets also offer many preserved goods, pickles, cured meats, dried foods, anything one could wish for in Chinese cuisine can be found here.
Due to space and hygiene reasons, these open street markets have been slowly replaced by "municipal services buildings". Those enclosed centres commonly offer wet market stalls, cooked food centres where the freshly bought ingredients can be prepared by professional chefs, as well as sports facilities and libraries. A true one-stop-shop type of establishment.
