Unity actually listened!
After releasing a terrible Hub update that removed the ability to create offline projects, in response to the backlash, Unity have reverted this behavior (sorta).

Right, so they changed Unity Hub so you can't make new projects without them being connected to the cloud. That sucks.
Now you need to download this other client instead, and then you can just delete Unity Hub from your system unless you need the cloud stuff:

The 'Unity Hub Native' app will let you make local projects and do all that local project stuff you could do before.
Better still, just stop using Unity and use ANYTHING else.
Unity have just released a controversial Unity Hub upgrade... You can no longer create non-Cloud projects!

Fish are now fully aware of their fearsome predator and can flee before them. It's a bit hectic and janky, but then again so is life, so surely this is super realistic. This should be good enough for the basics of fish catching.
Lil' fishies have started to grow aware of the player and can now flee when they get too close! Sorta. This is a first step towards it at least, for now they just speed up but can't break out of their move cycle just yet. Also, statues can now signal the player when they've received an offering and when all required offerings have been received, so there's that. Next step is more tweaks to fish behaviour.
An article earlier this week suggested Apple was considering buying Unity.
The thing was entirely clickbait, but it does lead to an interesting conversation. Who could/should buy Unity?

If the fish isn't fresh enough, statues can now refuse the offering and send it back to the Player. Bit rude tbh. They weren't even gonna eat it anyway.
I had to go back to Blender but now instead of slaps, statues can receive fish offerings. It doesn't exactly show for now, but I'm sure it makes them happy. As much as statues can be happy I guess.
Please refrain from slapping statues using fish. It's disrespectful. Also, they could retaliate.
(Note: slaps are made to be "PvP" interactions, but I thought people would try to slap the statues at some point, so I did this as a humorous way to signal that no, this isn't the actual goal the actual goal being to give them fish as an offering (which I haven't implemented yet))
Fish now have the ability to... to die and go bad after being caught and I feel like a monster The fact that I had to lower their lifespan to 5 seconds for the purpose of this video makes it even worse.
