Recipe - Thai Beef & Broccoli stir fry (เนื้อผัดบรอคโคลี่)
Delicious, made tonight, helped by some top beef.
Next time I'd add a birds-eye Thai chili for heat. And maybe 0.5 - 1 tsp of roast sesame oil (interesting factoid: a lot of central region Thai cuisine was adopted from Chinese cuisine, back in history)
Yield: 2 servings
Beef Marinade
250 g tender cut of beef (I used Aged Tipperary Aberdeen Angus Striploin)
1 tsp soy sauce
1 tsp oyster sauce
1 egg white
0.25 tsp ground white pepper
1.5 tsp cornstarch or tapioca starch
Sauce
4 cloves garlic, minced
0.25 tsp ground white pepper
0.5 tsp ground black pepper
1 Tbsp oyster sauce (I used 2)
1 tsp Golden Mountain sauce or thin soy sauce
1 tsp fish sauce
1.5 tsp sugar
1 Tbsp water
The Rest
Vegetable oil, as needed
250g broccoli (I used tenderstem)
... I added a long sweet red pepper

Not sure how I'd follow this recipe:
"Meat is used.
You prepare water.
You add fine-grained salt, dried barley cakes, onion, Persian shallot, and milk.
You crush and add leek and garlic."

We wish you a peaceful Easter. Three days of news detox. Our new #recipe will be the last one with asparagus for a while, next week we'll be moving on to new topics.
Shellie makes this roast pork about once a year. Maybe twice if I'm lucky. It's magic. If you love seriously cracked crackling then give this a go.

Y’all. I haven’t published an article in a minute. I’ve been busy fighting fascism and helping to archive data with @SafeguardingResearch. Calm down.
While I haven’t been able to finish one of my deeper pieces, I did manage to compile my recipe for homemade vegan tomato soup.
This is only my second published recipe. I’m not a cook. But sometimes I make good food. This is one of those good foods.

I really like eating steel cut oats. I don't really like cooking steel cut oats, but I've learned an overnight method that works very well:
The night before, boil two cups of water with a pinch of salt (I also add cinnamon). Add 1/2 cup of steel cut oats, stir, turn off the heat and cover, letting it sit overnight. In the morning, heat it up, stirring, adding water a tablespoon at a time as needed. Should just take 5- 6 minutes. Feeds two.
Enjoy!
"Chinese Spaghetti Bolognese": I rarely post recipes I haven't tried myself already, but I guarantee I'll be trying this one or a variation on it soon ...

Fill the jar the rest of the way with water, cap securely and give it a good shake. Let these rest for at least 24 hours and enjoy! Refrigerate after the first day and they'll last a good long time.
* The vinegar mellows the heat of the habaneros but these are still pretty spicy. If that's not your thing you could reduce the number of peppers or use something more mild like a jalapeño or a bell pepper.
You have got to make these pickled onions, they're super easy and so good!
You'll need:
3 smallish red onions
3 habanero peppers*
2 tsp salt
1 lemon
White vinegar
Water
A wide mouth quart jar.
Peel the onions and slice into thin half moons. Pack the first onion into the jar then chop one of the habaneros and add it. Repeat until the jar is full. Add the salt, squeeze in the juice of the lemon then pour in vinegar until the jar is ⅓ full. 1/2 #food #recipe #pickles
